Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup (10.5 oz)
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 32 oz frozen tater tots
  • salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Brown ground beef in a skillet over medium-high heat, breaking it apart as it cooks.
  • Add diced onion and cook until softened, then stir in garlic and cook briefly.
  • Drain excess fat and remove from heat. Stir in cream of mushroom soup and sour cream until combined.
  • Fold in 1 cup shredded cheese and season with salt and pepper.
  • Spread mixture evenly into prepared baking dish.
  • Arrange frozen tater tots in an even layer on top.
  • Sprinkle remaining cheese over the top.
  • Bake covered for 25 minutes, then uncover and bake 15–20 minutes until golden and crispy.
  • Let rest 5 minutes before serving.

Arrange tater tots in rows for even crispiness. Let casserole rest 5 minutes before serving. Store leftovers in the refrigerator for 3–4 days or freeze up to 3 months. Reheat uncovered at the end to restore crispiness.
