Ingredients

  • 1.5 lbs lean ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups frozen mixed vegetables
  • 1 can cream of mushroom soup (10.5 oz)
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 32 oz frozen tater tots
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a large skillet, brown ground beef over medium-high heat, breaking it apart as it cooks.
  • Add diced onion and cook until softened, then stir in garlic and cook until fragrant.
  • Drain excess fat, then stir in Worcestershire sauce, mixed vegetables, salt, and pepper.
  • In a bowl, mix cream of mushroom soup and sour cream until smooth, then combine with beef mixture.
  • Spread half of the beef mixture into the baking dish and top with 1 cup cheese.
  • Add remaining beef mixture and top with remaining cheese.
  • Arrange frozen tater tots evenly over the top.
  • Bake uncovered for 40–45 minutes until golden and crispy.
  • Let rest for 5 minutes before serving.

Notes

Use frozen tater tots for best crispiness. Let casserole rest 5 minutes before serving. Store leftovers in the fridge for up to 3–4 days or freeze up to 3 months. Reheat in oven for best texture.
