Instructions
In a large bowl, combine shredded coconut and graham cracker crumbs.
Add sweetened condensed milk and vanilla extract. Mix until sticky and fully combined.
Fold in chocolate chips until evenly distributed.
Cover the bowl and chill the mixture in the refrigerator for 30 minutes.
Roll chilled mixture into 1-inch balls. If sticky, use gloves or lightly oil your hands.
Optional: Roll in extra coconut or cocoa powder for coating.
Store in an airtight container in the fridge or freezer until ready to enjoy.
Notes
For firmer texture, store in the freezer and enjoy cold.
