Ingredients
  

  • Salad Ingredients:
  • 4 cups Lettuce Romaine, Butter, or Mixed Greens – Chopped
  • 1 can 15 oz Chickpeas – Drained and rinsed
  • 1/2 cup Dried Cranberries – Unsweetened preferred
  • 1/3 cup Nuts Walnuts, Almonds, or Pecans – Chopped or whole
  • 1/4 cup Red Onion – Thinly sliced
  • 1/4 cup Feta Cheese Optional – Crumbled
  • Dressing Ingredients:
  • 3 tbsp Olive Oil – Extra virgin
  • 2 tbsp Balsamic Vinegar
  • 1 tsp Dijon Mustard Optional
  • 1 tbsp Honey or Maple Syrup
  • Salt & Pepper – To taste

Instructions
 

  • Prep the Ingredients: Wash and chop the lettuce. Drain and rinse chickpeas. Chop nuts and slice onion.
  • Mix the Salad: Combine all salad ingredients in a large bowl.
  • Prepare the Dressing: Mix olive oil, balsamic vinegar, mustard, and honey (or maple syrup) in a small bowl. Whisk until smooth.
  • Toss and Serve: Drizzle dressing over salad, toss gently, and serve immediately.
