Homemade Lemon Dijon Salad Dressing

Ingredients
  

  • ¼ cup Fresh Lemon Juice about 1-2 lemons
  • 1 tbsp Dijon Mustard
  • 1 tbsp Apple Cider Vinegar or White Wine Vinegar
  • 1 tsp Honey or Maple Syrup optional
  • 1 small clove Garlic minced (optional)
  • cup Extra Virgin Olive Oil
  • ½ tsp Salt
  • ¼ tsp Black Pepper

Instructions
 

  • 1️⃣ Combine Base Ingredients
  • In a small mixing bowl or mason jar, whisk together lemon juice, Dijon mustard, apple cider vinegar, honey (if using), and minced garlic.
  • 2️⃣ Slowly Add Olive Oil
  • While whisking, slowly drizzle in the olive oil to emulsify the dressing. If using a mason jar, seal and shake vigorously.
  • 3️⃣ Season & Adjust
  • Add salt and black pepper, then taste. Adjust with more lemon juice, olive oil, or seasoning as needed.
  • 4️⃣ Store or Serve
  • Use immediately or store in an airtight container in the fridge for up to 1 week. Shake before use.

  • Serving Ideas: Drizzle over salads, use as a marinade for chicken or tofu, or toss with roasted veggies.
  • Storage Tip: If the olive oil solidifies in the fridge, let it sit at room temperature for 5-10 minutes before shaking.
