- 1 tbsp Dijon Mustard
- 1 tbsp Apple Cider Vinegar or White Wine Vinegar
- 1 tsp Honey or Maple Syrup optional
- 1 small clove Garlic minced (optional)
- ⅓ cup Extra Virgin Olive Oil
- ½ tsp Salt
- ¼ tsp Black Pepper

In a small mixing bowl or mason jar, whisk together lemon juice, Dijon mustard, apple cider vinegar, honey (if using), and minced garlic.

Add salt and black pepper, then taste. Adjust with more lemon juice, olive oil, or seasoning as needed.
