Equipment

  • glass jar with lid
  • Knife
  • Cutting board
  • Spoon

Ingredients

  • 1 cup fresh garlic cloves, peeled
  • 1 1/2 cups raw honey
  • optional: ginger, lemon peel, or chili flakes

Instructions

  • Peel the garlic cloves and keep them whole.
  • Add garlic cloves to a clean glass jar, filling it about three-quarters full.
  • Pour raw honey over the garlic, ensuring all cloves are fully submerged.
  • Seal the jar loosely and store it at room temperature away from direct sunlight.
  • Flip the jar daily to keep garlic coated and prevent air pockets.
  • Allow the mixture to ferment for 2 to 4 weeks before optimal use, though it can be used earlier.

Notes

Ensure garlic cloves remain fully submerged in honey to prevent spoilage. Store at room temperature in a cool, dark place. Loosen the lid slightly to release gases during fermentation and flip the jar daily for best results.
