Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 can black beans, drained (15 oz)
  • 1 cup corn
  • 1 bag nacho cheese Doritos (family size)
  • 2 cups shredded Mexican cheese blend
  • 1 cup sour cream
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • Brown ground beef in a skillet over medium-high heat, breaking it apart.
  • Add diced onion and cook until softened, then stir in garlic.
  • Stir in taco seasoning, diced tomatoes, black beans, and corn. Simmer for 5 minutes.
  • Remove from heat and mix in 1/2 cup sour cream.
  • Crush Doritos and spread half in the bottom of a 9x13-inch baking dish.
  • Add meat mixture over Doritos, then sprinkle 1 cup cheese on top.
  • Add remaining sour cream in dollops, then top with remaining Doritos and cheese.
  • Cover with foil and bake for 20 minutes, then uncover and bake 5–10 minutes until bubbly.
  • Let rest 5 minutes, then garnish with green onions and cilantro before serving.

Notes

Crush Doritos just before assembling to keep them crunchy. Let casserole rest 5 minutes before serving. Store leftovers in the refrigerator for 3–4 days or freeze up to 2 months. Reheat uncovered at the end to restore crispiness.
