This Doritos casserole is a cheesy, crunchy, and flavorful dish made with seasoned ground beef, beans, corn, and layers of crushed nacho cheese chips baked to perfection.
Brown ground beef in a skillet over medium-high heat, breaking it apart.
Add diced onion and cook until softened, then stir in garlic.
Stir in taco seasoning, diced tomatoes, black beans, and corn. Simmer for 5 minutes.
Remove from heat and mix in 1/2 cup sour cream.
Crush Doritos and spread half in the bottom of a 9x13-inch baking dish.
Add meat mixture over Doritos, then sprinkle 1 cup cheese on top.
Add remaining sour cream in dollops, then top with remaining Doritos and cheese.
Cover with foil and bake for 20 minutes, then uncover and bake 5–10 minutes until bubbly.
Let rest 5 minutes, then garnish with green onions and cilantro before serving.
Notes
Crush Doritos just before assembling to keep them crunchy. Let casserole rest 5 minutes before serving. Store leftovers in the refrigerator for 3–4 days or freeze up to 2 months. Reheat uncovered at the end to restore crispiness.
