Ingredients

  • 2 tbsp Unflavored gelatin Grass-fed like Vital Proteins
  • 1 scoop Collagen peptides Optional unflavored
  • 2 cups Tart cherry juice Or herbal tea e.g., hibiscus
  • ½ cup Cold filtered water To bloom gelatin
  • 1 tsp Fresh lemon juice Or apple cider vinegar optional
  • To taste — Monk fruit extract Optional for added sweetness

Instructions

  • Bloom gelatin: In a mixing bowl, pour cold water and sprinkle gelatin evenly. Let sit for 5–10 minutes until softened.
  • Heat juice: Warm your juice or tea in a saucepan until steaming but not boiling.
  • Combine: Stir bloomed gelatin into warm liquid until fully dissolved. Add collagen and stir smooth.
  • Add flavor: Mix in lemon juice or ACV. Sweeten with monk fruit if needed.
  • Pour and chill: Divide into jars or molds. Refrigerate 2–4 hours or until set.
  • Serve: Enjoy straight from the fridge as a snack or dessert.

Notes

You can swap tart cherry juice for hibiscus tea to reduce carbs further.
Adjust protein by adding more or less collagen per scoop.
Make a double batch and store for up to 7 days.
